Ingredients
  

For the Chili
  • 1 lb Ground Beef or ground chicken/pork
  • 1 cup Yellow Onions diced
  • 1 cup Poblano Peppers chopped
  • 2 tbsp Chili Powder
  • 1 tsp Garlic Powder
  • 1 tbsp Smoked Paprika
  • 1 tsp Ground Cumin
  • 1 tsp Cayenne Pepper adjust to taste
  • 28 oz Fire Roasted Tomatoes
  • 2 tbsp Tomato Paste
  • 4 oz Diced Green Chilies
  • 2 tbsp Hot Sauce adjust to taste
  • 2 tbsp Salted Butter
  • 2 leaves Bay Leaves remove before serving
  • 2 cups Chicken or Beef Broth or vegetable broth
  • 8 oz Cream Cheese
  • 1 cup Shredded Cheddar Cheese or Monterey Jack
  • 15 oz Mixed Chili Beans omit for meat-only chili
  • 1 cup Fresh Cilantro for garnish
  • 1 cup Chopped Green Onions for garnish
  • 1 avocado Avocado for serving
  • 1 cup Greek Yogurt for serving

Method
 

Cooking Steps
  1. In a Dutch oven, heat over medium-high heat and add the ground beef. Cook for about 5 minutes until browned.
  2. Transfer the browned beef to your crockpot using a slotted spoon.
  3. Add yellow onions and chopped poblano peppers to the crockpot.
  4. Sprinkle in the chili powder, garlic powder, smoked paprika, ground cumin, and cayenne pepper.
  5. Pour in the fire-roasted tomatoes, tomato paste, diced green chilies, and hot sauce.
  6. Add the broth, butter, and bay leaves. Season with salt and stir gently.
  7. Cover and set to cook on low for 6-8 hours or high for 4-5 hours.
  8. About 30 minutes before serving, stir in cream cheese, shredded cheddar, and mixed chili beans.
  9. Ladle into bowls and garnish with avocado, Greek yogurt, cilantro, and green onions.
