Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 500°F (260°C) and wrap bricks in aluminum foil to keep them clean.
  2. Place the chicken breast-side down on a cutting board, remove the backbone, and flatten the chicken.
  3. Mix vegetable oil, melted butter, salt, black pepper, garlic powder, and onion powder to create a seasoning mix.
  4. Sear the chicken in a hot cast iron skillet for about 15-20 minutes until the skin is crispy.
  5. Place the bricks on top of the chicken to weigh it down for even cooking.
  6. Prepare gremolata by blending rosemary, garlic, yellow pepperoncinis, vinegar, salt, and pepper in a food processor.
  7. Flip the chicken, brush with gremolata, and roast until internal temperature reaches 165°F (75°C).
  8. Let the chicken rest for 10-15 minutes before serving with gremolata drizzled on top.
