Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Pat the chicken breasts dry with paper towels. Season both sides with salt, pepper, garlic powder, and paprika.
Set up a breading station: Place the flour in one shallow dish, beat the egg in a second dish, and combine the panko breadcrumbs and crumbled feta cheese in a third dish.
Dredge each chicken breast in the flour, shaking off the excess. Dip it into the beaten egg, then coat it with the panko and feta mixture, pressing gently to adhere.
Heat the olive oil in a large skillet over medium heat. Once hot, add the breaded chicken breasts and cook for about 3-4 minutes on each side until golden brown.
Transfer the chicken to the prepared baking sheet and bake in the preheated oven for 15-20 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
While the chicken is baking, mix the honey and hot sauce in a small bowl until well combined.
Once the chicken is done, drizzle the hot honey mixture over the top and garnish with chopped parsley before serving.
