Preheat your oven to 425°F. Line a baking sheet with parchment paper.
In a medium bowl, combine paprika, cumin, garlic powder, onion powder, salt, black pepper, and cayenne pepper. Mix well.
Place the flour in a shallow dish. In another shallow dish, beat the eggs. In a third shallow dish, add the panko breadcrumbs.
Coat each chicken tender first in the flour, shaking off excess, then dip in the beaten eggs, and finally coat with panko breadcrumbs. Place the coated tenders on the prepared baking sheet.
Drizzle the olive oil over the chicken tenders. Bake in the preheated oven for 20-25 minutes, flipping halfway through, until golden brown and cooked through.
While the chicken is baking, prepare the herby yogurt dip. In a bowl, combine Greek yogurt, parsley, cilantro, lemon juice, garlic, salt, and pepper. Mix until well combined.
Once the chicken tenders are done, serve hot with the herby yogurt dip.
