  • 1 pound fresh salmon fillet skin removed and cut into bite-sized pieces
  • 1/2 cup panko breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 large egg beaten
  • 2 tablespoons fresh parsley chopped (optional)
  • Lemon wedges for serving

Method
 

  1. Preheat the oven to 400°F. Line a baking sheet with parchment paper.
  2. In a large bowl, combine the panko breadcrumbs, Parmesan cheese, garlic powder, onion powder, smoked paprika, salt, and black pepper. Mix well.
  3. Dip each salmon piece into the beaten egg, allowing any excess to drip off, then coat it in the breadcrumb mixture, pressing gently to adhere. Place the coated salmon bites on the prepared baking sheet.
  4. Bake in the preheated oven for 12-15 minutes, or until the salmon is cooked through and the coating is golden brown and crispy.
  5. Remove from the oven and let cool for a couple of minutes. Serve with lemon wedges and sprinkle with fresh parsley if desired.
