  • 1 cup Vegetable Oil For frying the wontons; avocado oil can be used.
Dressing
  • 3 tablespoons Peanut Oil Or substitute with any neutral oil.
  • 1 tablespoon Unseasoned Rice Vinegar
  • 1 tablespoon Chinese Hot Mustard Adjust for spice preference.
  • 2 tablespoons Light Soy Sauce Regular soy sauce can be used.
  • 1 teaspoon Sriracha For extra heat.
  • 1 teaspoon Sesame Oil Use sparingly.
  • 1 tablespoon Honey
  • 1 clove Garlic Minced.
  • 1 teaspoon Kosher Salt Adjust to taste.
  • 1 tablespoon Brown Sugar Optional.
Salad
  • 2 cups Rotisserie Chicken Shredded.
  • 2 cups Shredded Cabbage Can use pre-shredded.
  • 1 cup Shredded Red Cabbage
  • 1/2 cup Cilantro Leaves Chopped.
  • 1 medium Carrot Julienned.
  • 1 medium Red Onion Thinly sliced.
  • 1/4 cup Scallions Chopped.

Method
 

Prepare Wonton Strips
  1. Stack wonton wrappers and cut into thin strips. Heat vegetable oil in a skillet over medium-high heat. Fry the strips for about 30 seconds until golden brown, then drain on paper towels.
Whisk Together Dressing
  1. In a bowl, combine peanut oil, rice vinegar, hot mustard, soy sauce, Sriracha, sesame oil, honey, minced garlic, and kosher salt. Whisk until well blended.
Assemble the Salad
  1. In a large bowl, shred rotisserie chicken and add shredded cabbage, red cabbage, cilantro, carrots, red onion, and scallions. Toss to combine.
Combine with Dressing
  1. Drizzle dressing over the salad mixture and toss to coat all ingredients evenly.
Top with Wonton Strips
  1. Top the salad with fried wonton strips just before serving for added crunch.
