Step-by-Step Instructions
  1. If making homemade gnocchi, mix flour and eggs to form a dough, knead for 5 minutes, roll out, and cut into pieces.
  2. Slice the butternut squash in half, roast cut-side down at 400°F (200°C) for 25-30 minutes until tender, then mash.
  3. Heat olive oil in a skillet, cook the Italian sausage for 5-7 minutes, breaking apart until browned.
  4. In the same skillet, sauté chopped onions and minced garlic for 3-4 minutes. Add heavy cream and mashed butternut squash, mix until smooth.
  5. Add cooked gnocchi and browned sausage to the sauce, toss everything together until heated through.
