For the Pasta and Sauce
  • 8 oz Boursin cheese Look for garlic and fine herb flavor.
  • 1 cup Orzo pasta Can swap with any short pasta like penne or fusilli.
  • 2 cups Baby spinach Adds color and nutrition.
  • 1 cup Shredded Parmesan cheese Optional but highly recommended for added flavor.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C) and grease a large baking dish lightly with olive oil.
  2. Trim the root ends of garlic cloves, spread with cubed sweet potatoes, drizzle with 1.5 tbsp olive oil, and season with salt, pepper, and Italian seasoning. Roast for 20 minutes.
  3. Cube the chicken breast and season with salt, pepper, and Italian seasoning while boiling salted water for orzo.
  4. After 20 minutes of roasting, add chicken cubes and crumbled Boursin cheese to the baking dish, drizzle with remaining olive oil, and roast for another 15 minutes.
  5. Cook orzo according to package instructions, reserving 1.5 cups of pasta water before draining.
  6. Squeeze roasted garlic out of skins, mash, and combine with sweet potatoes, chicken, Boursin, drained orzo, and spinach, adding reserved pasta water to reach desired creaminess.
  7. Top with Parmesan cheese and broil for 2-3 minutes for a golden finish, keeping an eye to prevent burning.
