- Preheat your oven to 425°F (220°C) and grease a large baking dish lightly with olive oil.
- Trim the root ends of garlic cloves, spread with cubed sweet potatoes, drizzle with 1.5 tbsp olive oil, and season with salt, pepper, and Italian seasoning. Roast for 20 minutes.
- Cube the chicken breast and season with salt, pepper, and Italian seasoning while boiling salted water for orzo.
- After 20 minutes of roasting, add chicken cubes and crumbled Boursin cheese to the baking dish, drizzle with remaining olive oil, and roast for another 15 minutes.
- Cook orzo according to package instructions, reserving 1.5 cups of pasta water before draining.
- Squeeze roasted garlic out of skins, mash, and combine with sweet potatoes, chicken, Boursin, drained orzo, and spinach, adding reserved pasta water to reach desired creaminess.
- Top with Parmesan cheese and broil for 2-3 minutes for a golden finish, keeping an eye to prevent burning.
