  • 1 cup Unsweetened Coconut Flakes or Chips You can omit or replace with additional nuts or seeds.
  • 1/2 cup Chopped Pecans Walnuts or almonds can be substituted.
  • 1/2 cup Pumpkin Seeds Sunflower seeds can be an alternative.
  • 2 teaspoons Pumpkin Pie Spice Substitute with 1 teaspoon cinnamon, 1/4 teaspoon ginger, and a pinch of nutmeg, cloves, and allspice.
  • 1/2 teaspoon Flaked Sea Salt Use less if using table salt.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 325°F (163°C). Line a baking sheet with parchment paper or a silicone mat.
  2. In a microwave-safe bowl, combine the coconut oil and maple syrup. Microwave for 30 to 60 seconds until fully melted.
  3. Incorporate the pumpkin puree into the melted mixture, stirring until fully integrated.
  4. In a large mixing bowl, combine rolled oats, coconut flakes, chopped pecans, pumpkin seeds, pumpkin pie spice, and sea salt. Pour the pumpkin mixture over and mix thoroughly.
  5. Spread the mixture onto the prepared baking sheet in an even layer and bake for 35 to 40 minutes, stirring halfway through.
  6. Allow the granola to cool for at least 15 minutes before breaking it into clusters.
  7. Transfer to an airtight container for storage.
