- Preheat your oven to 350°F (175°C) and grease a 2-quart baking dish.
- In a large mixing bowl, combine rolled oats, baking powder, cinnamon, and salt. Stir until mixed.
- Add milk, pure maple syrup, egg/chia egg, melted butter, and vanilla extract to the dry ingredients. Mix until smooth.
- Melt additional butter and maple syrup in a saucepan, then mix in chopped pecans until coated.
- Pour pecan topping over the oatmeal mixture, spread evenly, and bake for 35-40 minutes until golden brown.
