  • 2 cups cottage cheese
  • 4 large hard-boiled eggs chopped
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1/4 cup green onions sliced
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 tablespoon fresh dill chopped (optional)
  • 4 slices whole grain bread optional, for serving

Method
 

  1. In a large mixing bowl, combine the cottage cheese, chopped hard-boiled eggs, mayonnaise, Dijon mustard, green onions, garlic powder, salt, and pepper.
  2. Gently fold the ingredients together until well mixed. If using fresh dill, add it at this stage and mix again.
  3. Taste and adjust seasoning if necessary.
  4. For best flavor, cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.
  5. Serve the egg salad on whole grain bread or enjoy it on its own as a light meal or snack.
