In a large bowl, beat the softened butter, granulated sugar, and brown sugar together until creamy.
Add the egg and vanilla extract to the butter mixture and mix until well combined.
In a separate bowl, mix the softened cream cheese and brewed coffee until smooth.
Gradually add the flour mixture to the butter mixture, mixing until just combined.
Fold in the cream cheese mixture until evenly distributed. If using, fold in the chocolate chips.
Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
Bake for 10-12 minutes or until the edges are lightly golden. Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
