Ingredients
  

  • 3 cups old-fashioned rolled oats
  • 1 cup chopped nuts such as pecans or walnuts
  • 1/2 cup brown sugar packed
  • 1/4 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup coconut oil melted (or vegetable oil)
  • 1/4 cup maple syrup or honey
  • 1 teaspoon vanilla extract
  • 1 cup mini chocolate chips optional
  • 1/2 cup dried fruit such as cranberries or raisins, optional

Method
 

  1. Preheat your oven to 350°F (175°C) and line a large baking sheet with parchment paper.
  2. In a large mixing bowl, combine the rolled oats, chopped nuts, brown sugar, granulated sugar, cinnamon, and salt. Stir until well mixed.
  3. In a separate bowl, whisk together the melted coconut oil, maple syrup, and vanilla extract until combined.
  4. Pour the wet ingredients over the dry ingredients and mix until the oats and nuts are evenly coated.
  5. Spread the granola mixture evenly on the prepared baking sheet. Bake for 25-30 minutes, stirring halfway through, until golden brown.
  6. Remove from the oven and let the granola cool completely on the baking sheet. It will become crunchy as it cools.
  7. Once cooled, stir in the mini chocolate chips and dried fruit if using. Store in an airtight container at room temperature.
