  • 1 cup cream cheese softened
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 8 slices of bread white or whole wheat
  • 1/4 cup cinnamon sugar 1/4 cup sugar mixed with 1 tablespoon cinnamon
  • 4 large eggs
  • 1/2 cup milk
  • 1 teaspoon ground cinnamon
  • 2 tablespoons butter
  • Maple syrup for serving

Method
 

  1. In a medium bowl, mix the softened cream cheese, powdered sugar, and vanilla extract until smooth.
  2. Trim the crusts off each slice of bread and flatten them with a rolling pin.
  3. Spread about 2 tablespoons of the cream cheese mixture onto each slice of bread, then roll them up tightly.
  4. In a shallow dish, whisk together the eggs, milk, and ground cinnamon until well combined.
  5. Heat a large skillet over medium heat and melt 1 tablespoon of butter.
  6. Dip each roll-up into the egg mixture, ensuring they are coated on all sides, then place them seam-side down in the skillet.
  7. Cook for 2-3 minutes on each side, or until golden brown. Add more butter as needed for cooking.
  8. Once cooked, roll each French toast roll-up in the cinnamon sugar mixture until fully coated.
  9. Serve warm with maple syrup drizzled on top.
