Preheat your oven to 350°F. Line a baking sheet with parchment paper.
In a mixing bowl, combine the angel food cake mix, water, and vanilla extract. Mix until well combined and smooth.
Using a small cookie scoop or spoon, drop rounded tablespoons of the batter onto the prepared baking sheet, leaving space between each bite.
Bake in the preheated oven for 10-12 minutes, or until the bites are lightly golden and spring back when touched.
While the bites are baking, mix the granulated sugar and ground cinnamon in a shallow dish.
Once the bites are done, remove them from the oven and let them cool for a few minutes. While still warm, dip each bite into the melted butter, then roll them in the cinnamon-sugar mixture until fully coated.
If desired, dust with powdered sugar before serving.
