- Preheat your oven to 350°F (180°C) and line three baking sheets with parchment paper.
- In a medium bowl, whisk together 2 cups of all-purpose flour, 1 teaspoon of baking soda, and ½ teaspoon of salt. Set aside.
- Beat 1 cup of softened unsalted butter on medium speed until creamy, about 1 minute.
- Add 1 cup of dark brown sugar and 2 tablespoons of molasses to the creamed butter. Mix on medium speed for 2-3 minutes.
- Mix in one whole egg, an additional egg yolk, and 1 teaspoon of pure vanilla extract.
- Gradually add the flour mixture to the wet ingredients, mixing until just combined.
- Roll the dough into 1.5 oz (45 g) balls and coat in granulated sugar. Place on prepared baking sheets.
- Bake the cookies for 10-11 minutes, rotating the pans halfway through.
- Allow cookies to cool on the pan for 5-10 minutes before transferring to a wire rack.
