Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (180°C) and line three baking sheets with parchment paper.
  2. In a medium bowl, whisk together 2 cups of all-purpose flour, 1 teaspoon of baking soda, and ½ teaspoon of salt. Set aside.
  3. Beat 1 cup of softened unsalted butter on medium speed until creamy, about 1 minute.
  4. Add 1 cup of dark brown sugar and 2 tablespoons of molasses to the creamed butter. Mix on medium speed for 2-3 minutes.
  5. Mix in one whole egg, an additional egg yolk, and 1 teaspoon of pure vanilla extract.
  6. Gradually add the flour mixture to the wet ingredients, mixing until just combined.
  7. Roll the dough into 1.5 oz (45 g) balls and coat in granulated sugar. Place on prepared baking sheets.
  8. Bake the cookies for 10-11 minutes, rotating the pans halfway through.
  9. Allow cookies to cool on the pan for 5-10 minutes before transferring to a wire rack.
