Preparation Steps
- In a large mixing bowl, combine 1 cup of mascarpone cheese with 1 cup of heavy cream. Beat on medium speed for 2–3 minutes until smooth and fluffy.
- Add 1/4 cup of amaretto liqueur, 1/4 cup of cherry juice, and 1 teaspoon of vanilla extract to the mascarpone mixture. Mix for another 1–2 minutes.
- In a separate bowl, combine 1/4 cup of granulated sugar with 1/2 cup of cherry preserves. Stir until blended.
- Incorporate the cherry blend into the mascarpone mixture. Beat for an additional minute.
- Gently fold in about 1 cup of chopped fresh cherries into the mascarpone mixture.
- Pour 1/4 cup of amaretto liqueur mixed with 1/4 cup of cherry juice into a shallow dish.
- Quickly dip each ladyfinger into the amaretto mixture, taking care not to soak them. Arrange in a 9x13 inch baking dish.
- Spread half of the mascarpone mixture over the layer of ladyfingers.
- Add another layer of dipped ladyfingers on top of the mascarpone mixture.
- Spread the remaining mascarpone mixture over the second layer of ladyfingers.
- Cover the dish tightly with plastic wrap and refrigerate for at least 4 hours, preferably overnight.
- Before serving, dust the top with cocoa powder and sprinkle with dark chocolate shavings.
