Preparation Steps
  1. In a large mixing bowl, combine 1 cup of mascarpone cheese with 1 cup of heavy cream. Beat on medium speed for 2–3 minutes until smooth and fluffy.
  2. Add 1/4 cup of amaretto liqueur, 1/4 cup of cherry juice, and 1 teaspoon of vanilla extract to the mascarpone mixture. Mix for another 1–2 minutes.
  3. In a separate bowl, combine 1/4 cup of granulated sugar with 1/2 cup of cherry preserves. Stir until blended.
  4. Incorporate the cherry blend into the mascarpone mixture. Beat for an additional minute.
  5. Gently fold in about 1 cup of chopped fresh cherries into the mascarpone mixture.
  6. Pour 1/4 cup of amaretto liqueur mixed with 1/4 cup of cherry juice into a shallow dish.
  7. Quickly dip each ladyfinger into the amaretto mixture, taking care not to soak them. Arrange in a 9x13 inch baking dish.
  8. Spread half of the mascarpone mixture over the layer of ladyfingers.
  9. Add another layer of dipped ladyfingers on top of the mascarpone mixture.
  10. Spread the remaining mascarpone mixture over the second layer of ladyfingers.
  11. Cover the dish tightly with plastic wrap and refrigerate for at least 4 hours, preferably overnight.
  12. Before serving, dust the top with cocoa powder and sprinkle with dark chocolate shavings.
