Preparation
- Brown the sausage in a nonstick skillet with olive oil over medium heat for about 5 minutes.
- Add chopped onion and minced garlic, cooking for about 2 minutes until onion is soft.
- Mix crushed tomatoes, fresh basil, salt, and pepper in the skillet and simmer on low for 15-20 minutes.
- Preheat your oven to 375°F (190°C) and slice the butternut squash into 1/8-inch rounds.
- Combine ricotta, Parmesan, fresh parsley, and egg in a bowl until smooth.
- In a casserole dish, layer sauce, squash, ricotta mixture, and mozzarella. Repeat layers, finishing with sauce and mozzarella.
- Cover with foil and bake for 30 minutes. Remove the foil and bake for an additional 30 minutes. Broil for 5 minutes for a golden top.
- Let the lasagna cool for 5-10 minutes before slicing into 8 pieces and serving warm.
