Ingredients
  

For the Filling
  • 1 lb Italian Chicken Sausage Substitute with turkey or plant-based sausage
  • 15 oz Part-Skim Ricotta Cottage cheese can be a lower-fat substitute
  • 1 large Egg Substitute with a flax egg for vegan option
  • 1/4 cup Fresh Parsley Optional
For the Sauce
  • 28 oz Crushed Tomatoes Can substitute with diced tomatoes or marinara sauce
  • 3 cloves Garlic Minced
  • 1 medium Onion Yellow or white onion
  • 1 tsp Fresh Basil Dried basil can substitute
For the Layers
  • 2 lb Butternut Squash Can use zucchini or eggplant as alternatives
  • 2 cup Shredded Mozzarella Dairy-free cheese for vegan version
  • 1/2 cup Parmesan Cheese Nutritional yeast is a dairy-free substitute
For Cooking
  • 2 tbsp Extra Virgin Olive Oil Light olive oil can also be used

Method
 

Preparation
  1. Brown the sausage in a nonstick skillet with olive oil over medium heat for about 5 minutes.
  2. Add chopped onion and minced garlic, cooking for about 2 minutes until onion is soft.
  3. Mix crushed tomatoes, fresh basil, salt, and pepper in the skillet and simmer on low for 15-20 minutes.
  4. Preheat your oven to 375°F (190°C) and slice the butternut squash into 1/8-inch rounds.
  5. Combine ricotta, Parmesan, fresh parsley, and egg in a bowl until smooth.
  6. In a casserole dish, layer sauce, squash, ricotta mixture, and mozzarella. Repeat layers, finishing with sauce and mozzarella.
  7. Cover with foil and bake for 30 minutes. Remove the foil and bake for an additional 30 minutes. Broil for 5 minutes for a golden top.
  8. Let the lasagna cool for 5-10 minutes before slicing into 8 pieces and serving warm.
