For the Salmon
  • 4 fillets Salmon Fresh or frozen, both work well
  • 1 tbsp Kosher Salt
  • 1 tsp Onion Powder
  • 1 tsp Garlic Powder
  • 1 tsp Paprika
For the Bang Bang Sauce
  • 1/2 cup Mayonnaise
  • 1/4 cup Sweet Chili Sauce Adjust for taste
  • 1 tbsp Soy Sauce Use low-sodium if preferred
  • 2 cloves Garlic Freshly minced
For the Avocado Cucumber Salsa
  • 1 large Avocado Ripe
  • 1 cup Cucumber Diced
  • 1/4 cup Cilantro Chopped, optional
  • 2 tbsp Lime Juice Fresh is best
  • 1 tbsp Honey Adjust to taste

Method
 

Preparation
  1. Preheat your oven to 400°F (204°C). Pat the salmon fillets dry with paper towels.
  2. Mix kosher salt, onion powder, garlic powder, and paprika. Sprinkle this seasoning mix over the salmon fillets.
  3. Combine mayonnaise, sweet chili sauce, minced garlic, and soy sauce in a bowl. Stir until smooth.
  4. Place the salmon on a baking sheet lined with parchment paper. Brush the Bang Bang sauce over the fillets.
  5. Bake the salmon for 12 minutes or until it flakes easily with a fork. Optionally broil for an extra minute.
  6. In a bowl, combine diced avocado, chopped cucumber, cilantro, lime juice, salt, and honey. Toss gently to mix.
  7. Serve the Bang Bang Salmon over jasmine or brown rice, topped with avocado cucumber salsa.
