- 8 ounces cheese tortellini
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red bell pepper, diced
- 1/4 cup red onion, finely chopped
- 1/2 cup black olives, sliced
- 1/2 cup mozzarella balls, halved
- 1/4 cup fresh basil, chopped
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Cook the cheese tortellini according to package instructions. Drain and rinse under cold water to cool. Set aside.
- In a large mixing bowl, combine the cherry tomatoes, cucumber, red bell pepper, red onion, black olives, mozzarella balls, and fresh basil.
- In a small bowl, whisk together the olive oil, red wine vinegar, Italian seasoning, salt, and pepper.
- Add the cooled tortellini to the vegetable mixture and pour the dressing over the top. Toss gently to combine all ingredients.
- Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld.
- Serve chilled or at room temperature.
Notes
- For added protein, consider adding grilled chicken or chickpeas.
- Substitute the vegetables based on your preference; spinach, artichokes, or carrots work well too.
