Description

A refreshing and nutritious salad featuring a mix of berries and a creamy lemon herb dressing.

Ingredients

Scale
  • 2 cups mixed greens (spinach, arugula, or your choice)
  • 1 cup strawberries, hulled and sliced
  • 1 cup blueberries
  • 1 cup raspberries
  • 1/2 cup walnuts, chopped
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup plain Greek yogurt
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon honey
  • 1 teaspoon Dijon mustard
  • 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the mixed greens, strawberries, blueberries, raspberries, walnuts, and feta cheese. Toss gently to mix the ingredients without bruising the berries.
  2. In a small bowl, whisk together the Greek yogurt, olive oil, lemon juice, honey, Dijon mustard, and dill until smooth. Season with salt and pepper to taste.
  3. Drizzle the creamy lemon herb dressing over the salad just before serving. Toss gently to coat the salad evenly.
  4. Serve immediately for the freshest taste, or chill in the refrigerator for up to 30 minutes before serving to allow the flavors to meld.

Notes

  • For added protein, consider adding grilled chicken or chickpeas to the salad.
  • Swap out the walnuts for pecans or almonds for a different flavor and texture.
