Ingredients

- 2 cups mixed greens (spinach, arugula, or your choice)
- 1 cup strawberries, hulled and sliced
- 1 cup blueberries
- 1 cup raspberries
- 1/2 cup walnuts, chopped
- 1/4 cup feta cheese, crumbled
- 1/4 cup plain Greek yogurt
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 teaspoon honey
- 1 teaspoon Dijon mustard
- 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
- Salt and pepper to taste
Instructions
- In a large bowl, combine the mixed greens, strawberries, blueberries, raspberries, walnuts, and feta cheese. Toss gently to mix the ingredients without bruising the berries.
- In a small bowl, whisk together the Greek yogurt, olive oil, lemon juice, honey, Dijon mustard, and dill until smooth. Season with salt and pepper to taste.
- Drizzle the creamy lemon herb dressing over the salad just before serving. Toss gently to coat the salad evenly.
- Serve immediately for the freshest taste, or chill in the refrigerator for up to 30 minutes before serving to allow the flavors to meld.
