Ingredients

  • 2 cups fresh strawberries, hulled and sliced
  • 1/4 cup fresh mint leaves
  • 1/4 cup honey or agave syrup
  • 2 cups sparkling water
  • Juice of 1 lemon
  • Ice cubes
  • Mint sprigs and strawberry slices for garnish

Instructions

  1. In a blender, combine the sliced strawberries, mint leaves, and honey (or agave syrup). Blend until smooth.
  2. Strain the mixture through a fine mesh sieve into a large pitcher to remove the seeds and mint bits.
  3. Add the lemon juice to the strained strawberry mixture and stir well.
  4. Slowly pour in the sparkling water and gently mix to combine.
  5. Fill glasses with ice cubes and pour the strawberry mixture over the ice.
  6. Garnish each glass with a mint sprig and a slice of strawberry. Serve immediately.
