Description

A delicious and easy-to-make Southwest Beef and Sweet Potato Skillet that combines ground beef, sweet potatoes, and a variety of spices for a flavorful meal.


Ingredients

  • 1 pound ground beef
  • 2 medium sweet potatoes, peeled and diced (about 2 cups)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced (any color)
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 cup corn (fresh, frozen, or canned)
  • 1 tablespoon olive oil
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges (for serving)

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the diced onion and bell pepper, cooking until softened, about 5 minutes.
  2. Stir in the minced garlic and cook for an additional 1 minute until fragrant.
  3. Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned and cooked through, about 5-7 minutes. Drain any excess fat if necessary.
  4. Stir in the diced sweet potatoes, chili powder, cumin, paprika, salt, and pepper. Mix well to coat the sweet potatoes in the spices.
  5. Cover the skillet and cook for about 10-15 minutes, stirring occasionally, until the sweet potatoes are tender.
  6. Add the black beans and corn to the skillet, mixing until heated through, about 3-5 minutes.
  7. Taste and adjust seasoning if necessary. Remove from heat and garnish with fresh cilantro. Serve with lime wedges on the side.

  • For a spicier version, add diced jalapeños or a pinch of cayenne pepper.
