A delicious and easy-to-make Southwest Beef and Sweet Potato Skillet that combines ground beef, sweet potatoes, and a variety of spices for a flavorful meal.

- 1 pound ground beef
- 2 medium sweet potatoes, peeled and diced (about 2 cups)
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced (any color)
- 1 can (15 ounces) black beans, drained and rinsed
- 1 cup corn (fresh, frozen, or canned)
- 1 tablespoon olive oil
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh cilantro, chopped (for garnish)
- Lime wedges (for serving)
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and bell pepper, cooking until softened, about 5 minutes.
- Stir in the minced garlic and cook for an additional 1 minute until fragrant.
- Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned and cooked through, about 5-7 minutes. Drain any excess fat if necessary.
- Stir in the diced sweet potatoes, chili powder, cumin, paprika, salt, and pepper. Mix well to coat the sweet potatoes in the spices.
- Cover the skillet and cook for about 10-15 minutes, stirring occasionally, until the sweet potatoes are tender.
- Add the black beans and corn to the skillet, mixing until heated through, about 3-5 minutes.
- Taste and adjust seasoning if necessary. Remove from heat and garnish with fresh cilantro. Serve with lime wedges on the side.
Notes
- For a spicier version, add diced jalapeños or a pinch of cayenne pepper.
- Substitute ground turkey or chicken for a leaner option, or use plant-based ground meat for a vegetarian version.
