- 1 medium onion, diced
- 1 bell pepper, diced (any color)
- 2 medium potatoes, diced (about 2 cups)
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 4 large eggs
- 1 cup cooked sausage or bacon, crumbled (optional)
- 1 cup shredded cheese (cheddar or your choice)
- Fresh parsley, chopped (for garnish)
Instructions
- Heat the olive oil in a large skillet over medium heat. Add the diced onion and bell pepper, and sauté for about 5 minutes until softened.
- Add the diced potatoes to the skillet. Season with garlic powder, paprika, salt, and pepper. Cook for about 15-20 minutes, stirring occasionally, until the potatoes are tender and golden brown.
- If using, stir in the cooked sausage or bacon and cook for an additional 2-3 minutes to heat through.
- Create four small wells in the potato mixture and crack an egg into each well. Cover the skillet and cook for about 5-7 minutes, or until the eggs are cooked to your desired doneness.
- Sprinkle the shredded cheese over the top and cover again for 1-2 minutes until the cheese is melted.
- Remove from heat and garnish with fresh parsley before serving.
Notes
- For a spicier kick, add diced jalapeños or a dash of hot sauce to the skillet.
- You can also substitute sweet potatoes for regular potatoes for a different flavor and added nutrients.
