- 1 pound large shrimp, peeled and deveined
- 1 pound baby red potatoes, halved
- 1 pound sweet corn, cut into thirds
- 1/4 cup unsalted butter, melted
- 2 tablespoons seafood seasoning blend
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon sea salt
- 1/4 teaspoon freshly ground black pepper
- 1 lemon, thinly sliced
- Chopped fresh cilantro (for garnish)
- Aluminum foil
Instructions
- Preheat your grill or oven to 400°F.
- Cut four pieces of aluminum foil, each about 12 inches long.
- In a mixing bowl, combine the shrimp, halved baby potatoes, and corn pieces.
- Pour the melted butter over the mixture and sprinkle with seafood seasoning, onion powder, smoked paprika, sea salt, and black pepper. Mix well.
- Spoon the shrimp and vegetable mixture onto the center of each foil piece, then layer lemon slices on top.
- Carefully fold the foil over the ingredients, sealing each packet tightly.
- Place the foil packets on the grill or in the oven and cook for 15-20 minutes, or until the shrimp turn pink and the potatoes are fork-tender.
- Gently open the foil packets and sprinkle with fresh cilantro before serving.
Notes
- For an extra flavor boost, consider adding a dash of hot sauce or some diced bell peppers.
- You can swap the shrimp for scallops or chunks of fish for a delightful variation.
