A quick and tasty shrimp boil recipe cooked in foil packs, perfect for grilling or baking.


Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 pound baby red potatoes, halved
  • 1 pound sweet corn, cut into thirds
  • 1/4 cup unsalted butter, melted
  • 2 tablespoons seafood seasoning blend
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 lemon, thinly sliced
  • Chopped fresh cilantro (for garnish)
  • Aluminum foil

Instructions

  1. Preheat your grill or oven to 400°F.
  2. Cut four pieces of aluminum foil, each about 12 inches long.
  3. In a mixing bowl, combine the shrimp, halved baby potatoes, and corn pieces.
  4. Pour the melted butter over the mixture and sprinkle with seafood seasoning, onion powder, smoked paprika, sea salt, and black pepper. Mix well.
  5. Spoon the shrimp and vegetable mixture onto the center of each foil piece, then layer lemon slices on top.
  6. Carefully fold the foil over the ingredients, sealing each packet tightly.
  7. Place the foil packets on the grill or in the oven and cook for 15-20 minutes, or until the shrimp turn pink and the potatoes are fork-tender.
  8. Gently open the foil packets and sprinkle with fresh cilantro before serving.
