Ingredients

  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped onion
  • 1/4 cup finely chopped bell pepper (any color)
  • 1/4 cup mayonnaise
  • 1 large egg
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup vegetable oil (for frying)

Instructions

  1. In a large bowl, combine the flaked salmon, breadcrumbs, onion, bell pepper, mayonnaise, egg, Dijon mustard, garlic powder, lemon juice, salt, and black pepper. Mix until well combined.
  2. Form the mixture into patties, about 2-3 inches in diameter. You should get approximately 8 patties.
  3. Heat the vegetable oil in a large skillet over medium heat. Once hot, add the patties to the skillet, cooking in batches if necessary to avoid overcrowding.
  4. Cook the patties for about 4-5 minutes on each side, or until golden brown and crispy. Remove from the skillet and drain on paper towels.
  5. Serve warm, garnished with lemon wedges or your favorite dipping sauce.
