- 4 medium potatoes, diced (about 4 cups)
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 cup beef broth
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 tablespoons olive oil
- 1 cup shredded cheddar cheese (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent, about 3-4 minutes.
- Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned, about 5-7 minutes. Drain excess fat if necessary.
- Stir in the diced potatoes, beef broth, paprika, oregano, salt, and black pepper. Bring the mixture to a boil.
- Reduce the heat to low, cover the skillet, and let it simmer for about 20-25 minutes, or until the potatoes are tender, stirring occasionally.
- If using, sprinkle the shredded cheddar cheese on top during the last 5 minutes of cooking. Cover to allow the cheese to melt.
- Remove from heat and garnish with fresh parsley before serving.
