Ingredients

- 1 pound sirloin steak, cut into 1-inch cubes
- 2 tablespoons extra virgin olive oil
- 2 tablespoons fresh rosemary, finely chopped
- 4 cloves garlic, crushed
- 1 teaspoon sea salt
- 1/2 teaspoon freshly ground black pepper
- 1 red bell pepper, diced into 1-inch squares
- 1 yellow bell pepper, diced into 1-inch squares
- 1 medium red onion, cut into thick wedges
- 8 skewers (if using wooden skewers, soak in water for 30 minutes)
Instructions
- In a mixing bowl, whisk together the olive oil, chopped rosemary, crushed garlic, sea salt, and black pepper until well combined.
- Add the sirloin cubes to the bowl and mix thoroughly to ensure each piece is coated with the marinade.
- Cover the bowl with plastic wrap and let it marinate in the refrigerator for a minimum of 30 minutes, or up to 2 hours for enhanced flavor.
- Heat your grill to a medium-high temperature.
- Carefully thread the marinated steak onto the skewers, alternating with the red and yellow bell pepper pieces and onion wedges.
- Grill the skewers for approximately 8-10 minutes, turning them every couple of minutes to achieve even cooking.
- Cook until the steak reaches your preferred doneness, aiming for 135°F for medium-rare or 145°F for medium.
- Once grilled, take the skewers off the heat and allow them to rest for about 5 minutes before serving.
Notes
- For an extra layer of flavor, consider adding a teaspoon of smoked paprika to the marinade.
