Ingredients

  • 1 pound sirloin steak, cut into 1-inch cubes
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons fresh rosemary, finely chopped
  • 4 cloves garlic, crushed
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 red bell pepper, diced into 1-inch squares
  • 1 yellow bell pepper, diced into 1-inch squares
  • 1 medium red onion, cut into thick wedges
  • 8 skewers (if using wooden skewers, soak in water for 30 minutes)

Instructions

  1. In a mixing bowl, whisk together the olive oil, chopped rosemary, crushed garlic, sea salt, and black pepper until well combined.
  2. Add the sirloin cubes to the bowl and mix thoroughly to ensure each piece is coated with the marinade.
  3. Cover the bowl with plastic wrap and let it marinate in the refrigerator for a minimum of 30 minutes, or up to 2 hours for enhanced flavor.
  4. Heat your grill to a medium-high temperature.
  5. Carefully thread the marinated steak onto the skewers, alternating with the red and yellow bell pepper pieces and onion wedges.
  6. Grill the skewers for approximately 8-10 minutes, turning them every couple of minutes to achieve even cooking.
  7. Cook until the steak reaches your preferred doneness, aiming for 135°F for medium-rare or 145°F for medium.
  8. Once grilled, take the skewers off the heat and allow them to rest for about 5 minutes before serving.
