Description

Quick and Easy Chicken Fajitas are a flavorful and simple dish that combines seasoned chicken with fresh vegetables, served in warm tortillas.

Ingredients

Scale
  • 1 pound boneless, skinless chicken breasts, sliced into thin strips
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 medium onion, sliced
  • 8 small flour tortillas
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup sour cream
  • 1/2 cup salsa
  • Fresh cilantro for garnish (optional)

Instructions

  1. In a large bowl, combine the sliced chicken, olive oil, chili powder, cumin, garlic powder, onion powder, paprika, salt, and pepper. Toss until the chicken is well coated with the spices.
  2. Heat a large skillet over medium-high heat. Add the seasoned chicken and cook for about 5-7 minutes, stirring occasionally, until the chicken is cooked through and no longer pink.
  3. Add the sliced bell peppers and onion to the skillet. Cook for an additional 5 minutes, stirring frequently, until the vegetables are tender but still crisp.
  4. While the chicken and vegetables are cooking, warm the flour tortillas in a separate skillet or microwave until soft and pliable.
  5. To serve, place a generous portion of the chicken and vegetable mixture onto each tortilla. Top with shredded cheese, sour cream, salsa, and fresh cilantro if desired.
  6. Roll up the tortillas and enjoy your delicious chicken fajitas!

Notes

  • For a spicier kick, add sliced jalapeños or a dash of hot sauce to the chicken mixture.
  • Substitute the chicken with shrimp or tofu for a different protein option.
  • You can also add other vegetables like zucchini or mushrooms for extra flavor and nutrition.
