- 2 tablespoons of melted butter
- 8 oz of cream cheese, softened
- 1/2 cup of powdered sugar
- 1 teaspoon of vanilla extract
- 1 cup of heavy whipping cream
- 1 cup of fresh strawberries, chopped
- 12 popsicle sticks
Instructions
- In a bowl, mix the crushed graham crackers with melted butter until well combined.
- Press the mixture into the bottom of popsicle molds to form a crust.
- In another bowl, beat the cream cheese, powdered sugar, and vanilla extract until smooth.
- In a separate bowl, whip the heavy cream until stiff peaks form, then fold it into the cream cheese mixture.
- Gently fold in the chopped strawberries.
- Spoon the cheesecake mixture into the molds over the crust.
- Insert popsicle sticks into the center of each mold.
- Freeze for at least 4 hours or until firm.
- To serve, remove the pops from the molds and enjoy.
