Delicious and easy-to-make no-bake peanut butter oat cups that everyone will love!
Ingredients

- 1 cup rolled oats
- 1/2 cup creamy peanut butter
- 1/4 cup honey or maple syrup
- 1/4 cup chocolate chips (semi-sweet or dark)
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla extract
Instructions
- In a large mixing bowl, combine the rolled oats and salt.
- In a microwave-safe bowl, heat the peanut butter and honey (or maple syrup) together in the microwave for about 30 seconds, or until warm and easily mixable. Stir until smooth.
- Add the vanilla extract to the peanut butter mixture and mix well.
- Pour the peanut butter mixture over the oats and stir until all the oats are evenly coated.
- Fold in the chocolate chips until well distributed.
- Line a muffin tin with paper liners or lightly grease it. Spoon the mixture into each muffin cup, pressing down firmly to pack it in.
- Place the muffin tin in the refrigerator for at least 30 minutes to allow the cups to set.
- Once set, remove the cups from the muffin tin and enjoy! Store any leftovers in an airtight container in the fridge.
Notes
- For a nut-free version, substitute peanut butter with sunflower seed butter or almond butter.
- Add in dried fruits like cranberries or raisins for extra flavor and texture.
