- 1 pound large shrimp, peeled and deveined
- 1 cup cherry tomatoes, halved
- 1 cup bell peppers, sliced (any color)
- 1 medium red onion, sliced
- 1 zucchini, sliced
- 3 tablespoons olive oil
- 2 teaspoons dried oregano
- 2 teaspoons garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- Juice of 1 lemon
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the shrimp, cherry tomatoes, bell peppers, red onion, and zucchini.
- Drizzle the olive oil over the mixture and sprinkle with oregano, garlic powder, paprika, salt, and pepper. Toss everything together until well coated.
- Spread the shrimp and vegetables evenly on a large baking sheet.
- Bake in the preheated oven for 10-12 minutes, or until the shrimp are pink and cooked through.
- Remove from the oven and squeeze fresh lemon juice over the top. Garnish with chopped parsley before serving.
Notes
- For added flavor, marinate the shrimp in olive oil, lemon juice, and spices for 30 minutes before cooking.
- Feel free to substitute the vegetables with your favorites, such as asparagus or broccoli, for a different twist.
