- 1 pound ground beef
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 bell pepper (any color), sliced
- 1 medium zucchini, sliced
- 1 cup cherry tomatoes, halved
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley, chopped (for garnish)
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until it becomes translucent.
- Add the minced garlic and cook for an additional 1 minute until fragrant.
- Increase the heat to medium-high and add the ground beef. Cook until browned, breaking it apart with a spatula, about 5-7 minutes. Drain excess fat if necessary.
- Stir in the sliced bell pepper and zucchini. Cook for another 4-5 minutes until the vegetables are tender.
- Add the cherry tomatoes, oregano, basil, paprika, salt, and pepper. Stir well and cook for an additional 2-3 minutes until the tomatoes soften.
- Remove from heat and garnish with fresh parsley before serving.
Notes
- For a spicier kick, add a pinch of red pepper flakes while cooking.
- You can also substitute ground turkey or chicken for a leaner option.
- Serve over cooked rice or quinoa for a complete meal.
