Description
A delicious Mediterranean Chicken Flatbread recipe that combines shredded chicken with fresh vegetables and feta cheese, all baked on crispy flatbread.

- 2 cups cooked chicken, shredded
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red onion, thinly sliced
- 1/2 cup feta cheese, crumbled
- 1/4 cup Kalamata olives, pitted and sliced
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 4 pieces of flatbread or pita bread
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the shredded chicken, cherry tomatoes, cucumber, red onion, feta cheese, olives, and parsley.
- In a small bowl, whisk together the olive oil, lemon juice, oregano, salt, and pepper. Pour the dressing over the chicken mixture and toss to combine.
- Place the flatbread on a baking sheet. Spoon the chicken mixture evenly over each piece of flatbread.
- Bake in the preheated oven for 10-12 minutes, or until the flatbread is crispy and the edges are golden.
- Remove from the oven and let cool for a couple of minutes before slicing into pieces.
Notes
- For a spicy kick, add sliced jalapeños or a drizzle of hot sauce to the chicken mixture.
- Substitute grilled vegetables like bell peppers and zucchini for a vegetarian option.
