Ingredients

- 2 ripe mangoes, peeled and diced
- 1 large cucumber, diced
- 1 red bell pepper, diced
- 1/4 red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1 jalapeño, seeded and minced (optional)
- Juice of 2 limes
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- In a large mixing bowl, combine the diced mangoes, cucumber, red bell pepper, red onion, cilantro, and jalapeño (if using).
- In a small bowl, whisk together the lime juice, olive oil, salt, and pepper.
- Pour the dressing over the salad mixture and gently toss to combine all the ingredients.
- Taste and adjust seasoning if necessary, adding more salt, pepper, or lime juice as desired.
- Chill the salad in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
Notes
- For added crunch, include 1/4 cup of chopped nuts, such as cashews or almonds.
