Ingredients

  • 2 ripe mangoes, peeled and diced
  • 1 large cucumber, diced
  • 1 red bell pepper, diced
  • 1/4 red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 jalapeño, seeded and minced (optional)
  • Juice of 2 limes
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. In a large mixing bowl, combine the diced mangoes, cucumber, red bell pepper, red onion, cilantro, and jalapeño (if using).
  2. In a small bowl, whisk together the lime juice, olive oil, salt, and pepper.
  3. Pour the dressing over the salad mixture and gently toss to combine all the ingredients.
  4. Taste and adjust seasoning if necessary, adding more salt, pepper, or lime juice as desired.
  5. Chill the salad in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
