- 2 pounds boneless, skinless chicken breasts
- 1/4 cup olive oil
- 1/4 cup fresh lemon juice (about 2 lemons)
- 2 tablespoons honey
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- In a large bowl, whisk together olive oil, lemon juice, honey, minced garlic, oregano, thyme, salt, black pepper, and red pepper flakes until well combined.
- Add the chicken breasts to the marinade, ensuring they are fully coated. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
- Preheat the grill to medium-high heat.
- Remove the chicken from the marinade and let any excess drip off. Discard the marinade.
- Grill the chicken for 6-7 minutes on each side, or until the internal temperature reaches 165°F and the chicken is cooked through.
- Remove the chicken from the grill and let it rest for 5 minutes before slicing.
- Garnish with fresh parsley and serve with your favorite sides.
Notes
- For a smoky flavor, try adding a teaspoon of smoked paprika to the marinade.
- If you prefer a citrus twist, substitute lime juice for lemon juice.
