Description
A delicious and easy recipe for Lemon Butter Baked Chicken, featuring tender chicken thighs coated in a flavorful lemon butter sauce.
Ingredients
Scale
- 3 pounds bone-in, skin-on chicken thighs
- 1/2 cup unsalted butter, melted
- 1/4 cup fresh lemon juice (about 2 lemons)
- 1 tablespoon lemon zest
- 4 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the melted butter, lemon juice, lemon zest, minced garlic, thyme, oregano, salt, black pepper, and red pepper flakes. Mix well.
- Place the chicken thighs in a large baking dish and pour the lemon butter mixture over them, ensuring they are well coated.
- Bake in the preheated oven for 35-40 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the skin is golden brown.
- For extra crispy skin, broil the chicken for an additional 2-3 minutes at the end of baking.
- Remove from the oven and let the chicken rest for 5 minutes before serving. Garnish with chopped parsley.
Notes
- For a one-pan meal, add vegetables like asparagus, broccoli, or potatoes to the baking dish during the last 20 minutes of cooking.
- Substitute chicken breasts for thighs if you prefer leaner meat, adjusting the cooking time to avoid drying them out.
