  • 1/4 cup soy sauce
  • 2 tablespoons olive oil
  • 2 cloves minced garlic
  • 1 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon chopped fresh cilantro (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine the diced peaches, jalapeños, honey, soy sauce, olive oil, minced garlic, ground ginger, salt, and black pepper. Stir until well blended.
  3. Arrange the chicken thighs in a large baking dish, ensuring they fit snugly.
  4. Pour the peach-jalapeño marinade over the chicken, making sure each piece is generously coated.
  5. Transfer the dish to the oven and bake for 25-30 minutes, or until the chicken is thoroughly cooked and registers an internal temperature of 165°F (75°C).
  6. Allow the chicken to rest for about 5 minutes before slicing it into pieces.
  7. Serve the chicken with a spoonful of the remaining peach and jalapeño mixture and garnish with fresh cilantro.
