- 2 pounds boneless, skinless chicken thighs
- 1 cup diced fresh peaches
- 1/2 cup diced jalapeños (seeds removed for milder flavor)
- 1/4 cup honey
- 1/4 cup soy sauce
- 2 tablespoons olive oil
- 2 cloves minced garlic
- 1 teaspoon ground ginger
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon chopped fresh cilantro (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- In a mixing bowl, combine the diced peaches, jalapeños, honey, soy sauce, olive oil, minced garlic, ground ginger, salt, and black pepper. Stir until well blended.
- Arrange the chicken thighs in a large baking dish, ensuring they fit snugly.
- Pour the peach-jalapeño marinade over the chicken, making sure each piece is generously coated.
- Transfer the dish to the oven and bake for 25-30 minutes, or until the chicken is thoroughly cooked and registers an internal temperature of 165°F (75°C).
- Allow the chicken to rest for about 5 minutes before slicing it into pieces.
- Serve the chicken with a spoonful of the remaining peach and jalapeño mixture and garnish with fresh cilantro.
Notes
- For added flavor, mix in 1 teaspoon of smoked paprika into the marinade.
