- 8 ounces fusilli pasta
- 1 cup grape tomatoes, quartered
- 1 cup bell pepper, chopped
- 1/2 cup artichoke hearts, quartered
- 1/2 cup green olives, sliced
- 1/2 cup feta cheese, crumbled
- 1/4 cup red onion, diced
- 1/4 cup parsley, chopped
- 1/2 cup balsamic vinaigrette
- Salt and pepper to taste
Instructions
- In a pot of boiling salted water, cook the fusilli pasta until just tender, then drain and cool it under cold running water.
- In a large bowl, mix together the cooled pasta, grape tomatoes, bell pepper, artichoke hearts, green olives, feta cheese, red onion, and parsley.
- Drizzle the balsamic vinaigrette over the mixture and gently fold everything together until well combined.
- Adjust seasoning with salt and pepper as needed.
- Let the salad sit in the refrigerator for at least 30 minutes to enhance the flavors.
- Serve the salad chilled or at room temperature for a refreshing dish.
