Description

Ingredients

  • 8 ounces fusilli pasta
  • 1 cup grape tomatoes, quartered
  • 1 cup bell pepper, chopped
  • 1/2 cup artichoke hearts, quartered
  • 1/2 cup green olives, sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup red onion, diced
  • 1/4 cup parsley, chopped
  • 1/2 cup balsamic vinaigrette
  • Salt and pepper to taste

Instructions

  1. In a pot of boiling salted water, cook the fusilli pasta until just tender, then drain and cool it under cold running water.
  2. In a large bowl, mix together the cooled pasta, grape tomatoes, bell pepper, artichoke hearts, green olives, feta cheese, red onion, and parsley.
  3. Drizzle the balsamic vinaigrette over the mixture and gently fold everything together until well combined.
