  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 cup broccoli florets
  • 1 cup bell peppers, sliced (any color)
  • 1/4 cup green onions, chopped
  • 1 tablespoon sesame seeds (optional)

Instructions

  1. Combine the hot honey, garlic powder, onion powder, smoked paprika, salt, and pepper in a mixing bowl. Add the chicken thighs, ensuring they are thoroughly coated in the marinade. Allow to marinate for at least 30 minutes, or refrigerate for up to 2 hours.
  2. Preheat your oven to 400°F (200°C) and prepare a baking sheet with parchment paper. Place the marinated chicken thighs on the sheet and bake for 20-25 minutes until fully cooked and the internal temperature reaches 165°F (75°C).
  3. While the chicken is baking, heat olive oil in a skillet over medium heat. Add the broccoli and bell peppers, cooking for about 5-7 minutes until they are tender yet still crisp.
  4. Once the chicken is finished baking, let it rest briefly before slicing it into strips.
  5. Distribute the cooked rice evenly among four bowls. Layer each bowl with the sautéed vegetables and the sliced chicken. Drizzle any leftover hot honey over the top, and finish with a sprinkle of green onions and sesame seeds if desired.
