- 2 lbs pork shoulder, cut into chunks
- 2 tablespoons olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 2 cups carrots, sliced
- 2 cups potatoes, diced
- 1 cup celery, sliced
- 1 tablespoon tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 2 tablespoons flour
- 2 tablespoons water
Instructions
- Heat olive oil in a large pot over medium heat. Add pork chunks and brown on all sides. Remove and set aside.
- In the same pot, add onion and garlic, sauté until onion is translucent.
- Return pork to the pot. Stir in chicken broth, tomato paste, thyme, rosemary, salt, and pepper. Bring to a boil.
- Reduce heat to low, cover, and simmer for 1 hour.
- Add carrots, potatoes, and celery. Simmer for another 30 minutes or until vegetables are tender.
- In a small bowl, mix flour and water to form a paste. Stir into the stew to thicken.
- Cook for an additional 10 minutes. Adjust seasoning if necessary.
- Serve hot and enjoy!
Notes
- For a thicker stew, add more flour and water mixture.
- Feel free to add other vegetables like peas or green beans.
- This stew can be made a day ahead and tastes even better the next day.
