Ingredients

  • 2 lbs pork shoulder, cut into chunks
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups carrots, sliced
  • 2 cups potatoes, diced
  • 1 cup celery, sliced
  • 1 tablespoon tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 tablespoons flour
  • 2 tablespoons water

Instructions

  1. Heat olive oil in a large pot over medium heat. Add pork chunks and brown on all sides. Remove and set aside.
  2. In the same pot, add onion and garlic, sauté until onion is translucent.
  3. Return pork to the pot. Stir in chicken broth, tomato paste, thyme, rosemary, salt, and pepper. Bring to a boil.
  4. Reduce heat to low, cover, and simmer for 1 hour.
  5. Add carrots, potatoes, and celery. Simmer for another 30 minutes or until vegetables are tender.
  6. In a small bowl, mix flour and water to form a paste. Stir into the stew to thicken.
  7. Cook for an additional 10 minutes. Adjust seasoning if necessary.
  8. Serve hot and enjoy!

  • For a thicker stew, add more flour and water mixture.
  • Feel free to add other vegetables like peas or green beans.
  • This stew can be made a day ahead and tastes even better the next day.
