Grilled Mango Chicken is a flavorful dish that combines juicy chicken breasts with a sweet and tangy mango marinade, perfect for a summer barbecue.


Ingredients

  • 2 boneless, skinless chicken breasts (about 1 pound)
  • 1 ripe mango, peeled and diced
  • 1/4 cup fresh lime juice (about 2 limes)
  • 2 tablespoons honey
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • Fresh cilantro, for garnish

Instructions

  1. Preheat your grill to medium-high heat.
  2. In a medium bowl, combine the diced mango, lime juice, honey, olive oil, minced garlic, cumin, salt, black pepper, and red pepper flakes. Mix well to create a marinade.
  3. Place the chicken breasts in a large resealable plastic bag or shallow dish. Pour half of the marinade over the chicken, ensuring it is well coated. Reserve the other half of the marinade for basting and serving.
  4. Marinate the chicken in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.
  5. Remove the chicken from the marinade and discard the used marinade. Grill the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F.
  6. During the last few minutes of grilling, brush the reserved marinade over the chicken for added flavor.
  7. Once cooked, remove the chicken from the grill and let it rest for 5 minutes. Slice and serve with additional diced mango and fresh cilantro on top.

Notes

  • For a smoky flavor, add a teaspoon of smoked paprika to the marinade.
  • Serve the grilled chicken over a bed of mixed greens or with a side of coconut rice for a tropical twist.
