Description

Grilled Lemon Herb Chicken is a flavorful and juicy dish that combines the zest of lemon with aromatic herbs, perfect for a summer barbecue.

Ingredients

Scale
  • 2 pounds boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • 1/4 cup fresh lemon juice (about 2 lemons)
  • 2 tablespoons Dijon mustard
  • 2 tablespoons honey
  • 4 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)
  • 1 tablespoon fresh thyme, chopped (or 1 teaspoon dried)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a bowl, whisk together the olive oil, lemon juice, Dijon mustard, honey, minced garlic, rosemary, thyme, salt, and black pepper until well combined.
  2. Place the chicken breasts in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring all pieces are well coated. Seal the bag or cover the dish.
  3. Refrigerate for at least 1 hour, or up to 8 hours for maximum flavor.
  4. Preheat your grill to medium-high heat.
  5. Remove the chicken from the marinade and discard the marinade.
  6. Grill the chicken for 6-7 minutes on each side, or until the internal temperature reaches 165°F.
  7. Remove the chicken from the grill and let it rest for 5 minutes before slicing.

Notes

  • For a smoky flavor, consider adding a teaspoon of smoked paprika to the marinade.
  • If you prefer a spicier kick, add a pinch of red pepper flakes.
  • Serve with grilled vegetables or a fresh salad for a complete meal.
