Dill Pickle Chicken Skewers are a delicious grilled dish featuring marinated chicken cubes infused with dill pickle juice and spices, perfect for summer barbecues.

- 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
- 1 cup dill pickle juice
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon black pepper
- 1 teaspoon paprika
- 1 tablespoon olive oil
- Wooden or metal skewers
Instructions
- In a bowl, combine the chicken cubes and dill pickle juice. Marinate in the refrigerator for at least 1 hour, or up to 4 hours for more flavor.
- Preheat the grill to medium-high heat. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
- In a small bowl, mix together garlic powder, onion powder, black pepper, and paprika.
- Remove the chicken from the marinade and pat dry with paper towels. Toss the chicken cubes in the spice mixture until evenly coated.
- Thread the chicken onto the skewers, leaving a little space between each piece for even cooking.
- Brush the skewers with olive oil. Place them on the grill and cook for 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
- Remove from the grill and let rest for a few minutes before serving.
Notes
- For a spicy kick, add a teaspoon of cayenne pepper to the spice mixture.
- Serve with a side of ranch dressing or a dill pickle dip for added flavor.
