Ingredients

  • 4 large eggs
  • 1 cup sour cream
  • 1 cup semi-sweet chocolate chips, melted

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a medium bowl, combine graham cracker crumbs, cocoa powder, ½ cup sugar, and melted butter. Mix until well combined.
  3. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust.
  4. In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy.
  5. Gradually add 1 cup of sugar and vanilla extract, mixing until well incorporated.
  6. Add the eggs one at a time, mixing on low speed after each addition until just combined.
  7. Fold in the melted chocolate and sour cream until fully combined.
  8. Pour the cheesecake batter over the prepared crust in the springform pan. Smooth the top with a spatula.
  9. Bake in the preheated oven for 55-60 minutes, or until the center is set but still slightly jiggly.
  10. Turn off the oven and crack the door open, allowing the cheesecake to cool in the oven for 1 hour.
  11. Remove from the oven and let it cool to room temperature before refrigerating for at least 4 hours or overnight.
  12. Before serving, top the cheesecake with whipped cream, chocolate shavings, or fresh berries for added flavor and presentation.
