- ½ cup unsweetened cocoa powder
- ½ cup granulated sugar
- ½ cup unsalted butter, melted
- 4 (8-ounce) packages cream cheese, softened
- 1 cup granulated sugar

- 4 large eggs
- 1 cup sour cream
- 1 cup semi-sweet chocolate chips, melted
Instructions
- Preheat your oven to 325°F (160°C).
- In a medium bowl, combine graham cracker crumbs, cocoa powder, ½ cup sugar, and melted butter. Mix until well combined.
- Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust.
- In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy.
- Gradually add 1 cup of sugar and vanilla extract, mixing until well incorporated.
- Add the eggs one at a time, mixing on low speed after each addition until just combined.
- Fold in the melted chocolate and sour cream until fully combined.
- Pour the cheesecake batter over the prepared crust in the springform pan. Smooth the top with a spatula.
- Bake in the preheated oven for 55-60 minutes, or until the center is set but still slightly jiggly.
- Turn off the oven and crack the door open, allowing the cheesecake to cool in the oven for 1 hour.
- Remove from the oven and let it cool to room temperature before refrigerating for at least 4 hours or overnight.
- Before serving, top the cheesecake with whipped cream, chocolate shavings, or fresh berries for added flavor and presentation.

- For a lighter version, substitute low-fat cream cheese and sour cream.
- Consider mixing in a teaspoon of espresso powder for a mocha flavor.
