- 2 cups fresh broccoli florets
- 1 cup cauliflower florets
- 1 cup shredded carrots
- 1/2 cup red onion, finely chopped
- 1/2 cup sunflower seeds
- 1/2 cup raisins
- 1/2 cup cooked bacon, crumbled (optional)
- 1/2 cup mayonnaise
- 2 tablespoons apple cider vinegar
- 2 tablespoons honey
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- In a large mixing bowl, combine the broccoli, cauliflower, shredded carrots, red onion, sunflower seeds, raisins, and crumbled bacon if using.
- In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, honey, salt, and black pepper until smooth.
- Pour the dressing over the vegetable mixture and toss until everything is well coated.
- Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.
- Before serving, give the salad a good toss again and adjust seasoning if necessary.
Notes
- For a lighter version, substitute Greek yogurt for half of the mayonnaise.
- Add diced apples or pears for a sweet crunch or swap out the raisins for dried cranberries for a different flavor profile.
