- 8 buttery croissants
- 8 large eggs
- 1 cup grated sharp cheddar cheese
- 8 slices crispy bacon or breakfast sausage patties
- 1/2 cup heavy cream
- Salt and freshly cracked black pepper
- 1 tablespoon olive oil
- Chopped chives or parsley for garnish (optional)
Instructions
- Start by heating your oven to 350°F (175°C).
- In a mixing bowl, combine the eggs, heavy cream, salt, and pepper, whisking until the mixture is smooth and airy.
- Heat olive oil in a non-stick skillet over medium heat. Pour the egg mixture into the skillet and cook gently, stirring occasionally, until the eggs are fluffy and just set, about 5-7 minutes. Take off the heat.
- Carefully slice each croissant in half lengthwise. On the bottom half, place a slice of bacon or a sausage patty, followed by a hearty spoonful of the scrambled eggs, and finish with a sprinkle of cheddar cheese.
- Cap each sandwich with the top half of the croissant.
- Arrange the assembled sandwiches on a baking sheet and pop them in the oven for around 10 minutes, or until the cheese is gooey and the croissants are heated through.
- Once out of the oven, add a sprinkle of fresh chives or parsley for an extra touch. Serve hot and enjoy!
