Ingredients

  • 8 buttery croissants
  • 8 large eggs
  • 1 cup grated sharp cheddar cheese
  • 8 slices crispy bacon or breakfast sausage patties
  • 1/2 cup heavy cream
  • Salt and freshly cracked black pepper
  • 1 tablespoon olive oil
  • Chopped chives or parsley for garnish (optional)

Instructions

  1. Start by heating your oven to 350°F (175°C).
  2. In a mixing bowl, combine the eggs, heavy cream, salt, and pepper, whisking until the mixture is smooth and airy.
  3. Heat olive oil in a non-stick skillet over medium heat. Pour the egg mixture into the skillet and cook gently, stirring occasionally, until the eggs are fluffy and just set, about 5-7 minutes. Take off the heat.
  4. Carefully slice each croissant in half lengthwise. On the bottom half, place a slice of bacon or a sausage patty, followed by a hearty spoonful of the scrambled eggs, and finish with a sprinkle of cheddar cheese.
  5. Cap each sandwich with the top half of the croissant.
  6. Arrange the assembled sandwiches on a baking sheet and pop them in the oven for around 10 minutes, or until the cheese is gooey and the croissants are heated through.
  7. Once out of the oven, add a sprinkle of fresh chives or parsley for an extra touch. Serve hot and enjoy!
