Description
A refreshing and crunchy salad featuring shredded chicken and a variety of fresh vegetables, topped with a flavorful dressing.
Ingredients
Scale
- 2 cups cooked and shredded chicken breast
- 4 cups mixed salad greens (such as romaine, spinach, and cabbage)
- 1 cup shredded carrots
- 1 cup sliced bell peppers (red, yellow, or green)
- 1 cup snap peas, trimmed
- 1/2 cup chopped green onions
- 1/4 cup sliced almonds
- 1/4 cup sesame seeds
- 1/2 cup chow mein noodles (optional for crunch)
- 1/4 cup soy sauce
- 2 tablespoons rice vinegar
- 2 tablespoons sesame oil
- 1 tablespoon honey
- 1 teaspoon minced garlic
- 1 teaspoon grated fresh ginger
- Salt and pepper to taste
Instructions
- In a large bowl, combine the mixed salad greens, shredded chicken, carrots, bell peppers, snap peas, green onions, almonds, and sesame seeds. If using chow mein noodles, add them just before serving for extra crunch.
- In a separate small bowl, whisk together the soy sauce, rice vinegar, sesame oil, honey, garlic, and ginger until well combined. Season with salt and pepper to taste.
- Pour the dressing over the salad mixture and toss gently to coat all the ingredients evenly.
- Serve immediately for the freshest taste, or chill in the refrigerator for about 30 minutes to allow the flavors to meld before serving.
Notes
- For a vegetarian option, substitute the chicken with marinated tofu or chickpeas.
- Add diced avocado or mango for a creamy texture and a hint of sweetness.
