- 2 large apples, cored and diced
- 1 cup shredded carrots
- 1 cup fresh cranberries (or 1/2 cup dried cranberries)
- 1/2 cup chopped walnuts or pecans
- 1/4 cup raisins (optional)
- 1/4 cup plain Greek yogurt
- 2 tablespoons honey
- 1 tablespoon lemon juice
- 1/2 teaspoon cinnamon
- Salt and pepper to taste
Instructions
- In a large mixing bowl, combine the diced apples, shredded carrots, fresh cranberries, chopped walnuts or pecans, and raisins if using. Toss gently to mix the ingredients evenly.
- In a separate small bowl, whisk together the Greek yogurt, honey, lemon juice, cinnamon, salt, and pepper until smooth.
- Pour the dressing over the salad mixture and toss until all the ingredients are well coated.
- Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld.
- Serve chilled, garnished with additional nuts or cranberries if desired.

- For a vegan option, substitute Greek yogurt with coconut yogurt and honey with maple syrup.
