Ingredients

- 1 cup raw cashews, soaked in water for at least 2 hours and drained
- 1/4 cup water
- 2 tablespoons lemon juice
- 2 tablespoons nutritional yeast
- 1 tablespoon Dijon mustard
- 1 tablespoon capers, drained
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- In a high-speed blender, combine the soaked cashews, water, lemon juice, nutritional yeast, Dijon mustard, capers, garlic powder, onion powder, salt, and black pepper.
- Blend on high until the mixture is completely smooth and creamy, scraping down the sides as needed.
- Taste and adjust seasoning if necessary, adding more lemon juice for tang or salt for flavor.
- Transfer the dressing to an airtight container and refrigerate for at least 30 minutes to allow the flavors to meld.
- Serve over your favorite salad, or use as a dip for vegetables.
Notes
- For a spicier kick, add a pinch of cayenne pepper or a dash of hot sauce.
- To make it a bit thicker, reduce the amount of water or add an extra tablespoon of soaked cashews.
